How many blades? It really all depends on weight, gearing and type of sand....

You'll probably be just fine with them in an 8-10 paddle tire, again...depending on the sand. wet sand, less paddle, fluffy...powdery sand, more paddle.

Just about any paddle is fine for overall duning and playing around.

When you get a little more serious about getting into drag racing...then you start with buffed haulers. Weight is everything...but the thinner the tire, the more puncture prone it is...so, Sand Stars are a fine choice...

10 inch rimes are fine for a duner...you want smaller rims for drag racing...again, the weight thing.

Have fun....

By the way, what dunes you gonna be riding?

I currently have 20x10x10 - 10 paddle haulers. I used to run 21x12x8 8 paddle haulers, and i think i am going to go back to a 21x12x8 8 or 10 paddle hauler. When you drop the air pressure down I think the smaller rims allow the tire to flatten out and give a better foot print for more traction in really soft sand. You can air them up if you want them to bite less. With my current 20x10x10s they dont seem to respond to airing down and hook up as well.
