Toomey Banshee Posted May 8, 2004 Report Share Posted May 8, 2004 (edited) I have a nice big hunk of salmon steak that I want to throw on the grill. I marinated it all day in some italian dressing. I think I should just grill it off, the boss, (wife) thinks I should throw some tin foil around it and throw it on the grill. Now keep in mind, I have been indulging in the champagne of beers, Miller, most of the day after yard work and other home type shit, so go slow. Any recomendations is much appreciated. Thanx. akpopeye Posted May 9, 2004 Report Share Posted May 9, 2004 IM a chef and i work with artic char and salmon all the time...grilling works good, but it tends to fall apart. If you grill it, i cook it on the skin side first, flip it over, scrape the skin off and do the other side, then flip it back over and do the side that had the skin on it. Make sure you spray it with some cooking spray But i suggest poach it or make some salmon patties out of it, kinda like crab cakes...i can get ya a recipe if you want. People are a big fan of the grills, but i feel for some fish, you just end up making a wreck of your nice filet. If you do grill, use a peice of foil on top of it to keep the moisture in and it helps to almost steam it Hope that helps.....never heard of itailian dressing for salmon, but if its good, let me know! I grilled a half on a griddle on the grill and coated it with pam and kept marinating it while it was cooking, turning alot. I took the other half and put it in the tin foil. Thats the way to go. Tin foil cooked everything in, it tasted great. The grilled portion was good, but the tin foil had no fishy taste, grilled had a very faint fishy taste, not much, but some. So, for anyone who cares about grilling fish, tin foil is the way to go. Grilling takes some taste out and dries it out. Signed; lol The Iron Chef.
