And I dont mean going wide open through a huge mud hole, but like cruzin through a field right after it rains when there is little puddles of mud and water everywhere. There isn't really anyway to keep mud from getting on anything after you ride through it. I had a bad experience with dog shit once that I won't get into. As far as removing the fenders you either take the whole thing off, (unless you get Maier fronts) or hack them off into a sleek dune dragster style. My friend has one and the fenders are awsome on it . You could hit mud in 5th gear and barely get any mud on you. To answer your question, I think the front fenders purpose on the banshee was for yamaha to have a place to put all their safety stickers...they definitely don't block the mud!
