Need help on my banshee jetting

I picked up a 2003 banshee special edition like 3 months ago for $1200 from a friend. I'm pretty new to the banshee community so I only know a few things here in there. I did a top end build put weisco piston pro lite,  cool head 21cc dome, advance the timing by 4 degrees, case saver, toomeys 6 exhaust, air pods on the carbs. I was told I need to be running around 30 pilot jet and 300 mains for 3000 elevation but when I took it to el mirage last week I noticed that it was lagging to put down the power. While cruising the banshee felt good but when I try to give it some pulls it will take around 3 seconds to fully react. I'm planning to go to pismo beach and would like to see if I can get it tune right before I go. I was told it was running rich since its a stock carb with those jets. Any suggestions? Boths pipes seem to smoke right.

what is your compression at? id imagine at 3k with 21cc domes you are at around 140? 

I would drop your pilot to a 27.5 and check where your needle position is at you might need to lean the clip out. 300 is safe probably a tad on the rich side depending on how hot or cold it is you could probably run a 280-290 main jet.   But you wont need a 30 pilot with just pipes and being at higher elevation.   Higher elevation means less air/fuel ratio, the less air you have, the less fuel you need.
